HARVESTING: by hand into small trays

VINIFICATION: The grapes are hand-picked and placed in small cases to dry, according to the traditional “appassimento”. They are crushed after at least 100/120 days, following a long fermentation. After racking and pressing, the wine is aged in oak barriques then refined in the bottle.

CHARACTERISTICS: Intense ruby red in colour. The nose on this complex wine opens with a succulent marasca cherry and a balsamic touch. Swirl the glass and uncover the hints of warm spices, vanilla and coffee. Powerful in structure, with clear and mellow tannins, light notes of flint, sweet coffee, chocolate and tobacco, with a long raisin finish.

FOOD PAIRINGS: Austere and firmly structured, perfect with game dishes, grilled meat and tasty, aged cheeses.
