GRAPE VARIETIES: Corvina and Corvinone, Rondinella, Molinara

TYPE OF SOIL: limestone-volcanic

HARVESTING: by hand into small trays

VINIFICATION: The grapes are harvested by hand in September and placed in the drying room, according to the traditional “appassimento”, for some months. After the crushing, the must macerates and ferments spontaneously at controlled temperature in vertical vats. After the racking off and the pressing, it refines in steel refrigerated tanks. Matured in the bottle.

CHARACTERISTICS: Deep red colour with purplish hints. Blueberry and gooseberry aromas, along with sweet, spicy notes. It has an enveloping taste with a sophisticated, sweet sensation, balanced by a pleasing acidity and the presence of light, soft tannins.

FOOD PAIRINGS: Excellent meditation wine, it is the perfect with chocolate sweets, short pastry and almond sweets. Perfect with mature or fermented cheeses.

SERVING TEMPERATURE: 14-15 °C
